1. Grilled Chicken Fajita Meal
This grilled chicken fajita meal is a great choice if you like to cook your meals in foil over the fire. This is simple to make and for full instructions, please head over to Real Housemoms.
2. Southwest Chicken
3. Simple Scrambled Eggs
How about some simple scrambled eggs? All you need is your eggs, water, and clarified butter. If you have a cooler then it would be better to take stick butter but if not, clarified butter will do the trick. The ratio for making your scrambled eggs will be to use 1 tablespoon of water and 1 tablespoon of butter for each egg.
Add your ingredients to your sauce pan, not a pot or a frying pan. I like to leave the egg yolks unbroken at first. Stir the ingredients away from the fire making sure the water and egg whites mix together. Place your pot over the fire and break the egg yolks once the eggs start to warm and then mix together. Once the butter is melting take the pan off the heat and keep stirring. You want to keep taking the eggs off the heat and then back on so as to barely cook the eggs but yet allows the butter to melt. Try to get into the routine of 30 seconds over the fire and then 15 seconds away.
Once the butter is completely melted and mixed together you can leave the eggs on the fire a little bit longer. Keep stirring until your eggs just come together. Your eggs will not seem done, and they aren’t. But take it off the heat anyway. The residual heat in the pan will take your eggs to perfection.
